Recipe: Tomato Sauce

Key to making a great Tomato Sauce
1) Texture/Mouth Feel
-
Comes from Tomato and Corn Starch
2) Aroma
- Onion, Garlic, Oregano
3) Balance Sweet & Sour
- Not to Sour and Not to sweet (Malaysian prefer sweeter tomato sauce)

Tomato Sauce (A recipe is just a guide, use your own judgment too)
Butter/Oil - As necessary
Onion - 2 (as big as Tennis Ball)
Garlic - 6 clove
Fresh Button Mushroom - 1pkt (Roughly 200-250g, The more the better !)
Shitake Mushroom - 200g
Tomato Puree - 2 Tins
Chicken Stock Powder - 2 tablespoon (As long as it's any brand of Ajinomoto based flavoring will do)
Dried Oregano - 1 tbsp (Omit this if you like)
Sugar - 50-80g (Taste and make your own judgment)
Corn Starch - About 20-40g ( Add bit by bit, Use your feel to judge whether it's thick enough)
Salt & Pepper - As necessary

1. Chop Onion, Garlic and Mushrooms finely.
2. Using Medium heat, add Butter/Oil and Garlic (Cook till almost brown)
3. Add Onion (Cook till Onion looks slightly translucent)
4. Add Mushroom (Cook till it starts to shrink)
5. Add Tomato Puree, Oregano ( Let it boil gently on Low Heat for about 10m, Stirring occasionally)
6.  Add Chicken Stock Powder, Salt, Pepper ( Taste and adjust accordingly, Ask the expert in your house if in doubt)
7*Optional Use a hand blender/ blender to blend it till fine (WARNING: It could splatter on you, so let it cool down slightly if you are not a dare devil)
8. Bring it back to heat
9. Mix Corn Starch with some Water
10. Add it in slowly, keep stirring. ( It will thicken up when it's boiling) Adjust till you have the consistency you like
11. Viola, Bon Apetit

Feel free to any other ingredient to it
Here's some suggestion:
1) Bacon, Ham
- Make sure you fry the Bacon till crispy first in a separate pan
2) Sausage
3) Meatball (Recipe coming soon)
4) Ground Beef/Pork/Chicken

Did you know cooking Pasta is as easy as cooking Mee Goreng?
Al- Dente
- Firm when bitten
- Some like it firm, some like it soft
- Most of the time, younger people like it firm, older like it soft
(Sounds like erectile dysfunction due to aging?)

My favourite brand of pasta








Recipe:
1) Boil Water  (The water should cover the Pasta)
- Add 1 tsp of Salt for Every 1L of Water
- (I would just throw in a random amount of salt)*Free style cooking
2) Add Pasta
- Stir well for the first 30 seconds to prevent it from sticking
3) Boil for 7-10 minutes
- Look at the packaging for more precise timing
- The only way to know it's done is by eating

4) Strain it dry
- Let it cool down by itself if you are using it soon


Otherwise; Here's a handy tip about Pasta:
*If you are keeping it for later use
1. Rinse the pasta with water till it's cool
2. Strain it dry
3. Drizzle with oil and mix it (Prevent it from sticking)
4. Do you know in restaurant we pre-pack our pasta according to a fixed weight? We would just take it out from the fridge and use straight when there's an order?
5. Store the pasta in a Tupperware/ plastic bag in the fridge (Can last up to 5 days)

Recipe: Carborana

In these 23 years of my live, my pinnacle orgasmic experience with a plate of pasta is at Dave's(1 Utama).
During my college years, I did my intern there and after I graduated I spent 3 months there, working 12-13 hours a day, 6days a week .
Guess what? It made me into a real man!
Here's my version of Carbonara, aka Yimz Carborana (Yimz was a nick given by one of my good old friend)

Carborana *I call it Carborana, not Carbonara (A recipe is just a guideline, use your own judgement too)
- Use more CornStarch to make it thicker

Streaky Bacon - 200g (Inspired Epic Meal Time)
Ham - 200g
Oil - 1 tbsp
1) Chop Bacon & Ham into small pieces
2) Using Medium Heat, Fry Bacon & Ham with Oil in a pot till it's crispy (Stir in occasionaly)
3) Reserved some the Artery Clogging Oil (To fry Eggs like a Real Man for breakfast)
4) Dump the Bacon & Ham into the Mushroom Soup Mixture

Recipe: Aglio Olio

Key to making Great Aglio Olio
1) Great Aroma
- Fry the Garlic till light brown and from the Chilli
2) Oiliness
- Best use Olive Oil ,  other oil will do ( Oil works like lubricant for the pasta to slurp into your mouth !)

Aglio Olio (A recipe is just a guideline, use your own judgement too)
Olive Oil - 1 tbsp
Garlic - 2 Clove
Chili - 1 tsp ( Add more if you are a fan of South Park, Asses on fire!)
Dried Oregano - A pinch (Omit this if you like)
Chicken Stock - A pinch (As long as it's any brand of Ajinomoto based flavoring will do)
Salt & Pepper - As necessary
Water - 1 tbsp

Pasta - 110g ( Pasta 101 to learn to cook Pasta)

1. Chop Garlic Finely, Cut the chili into small pieces
2. Heat up the pan (Non Stick would be better)
3. On Medium Heat, Fry Garlic with Olive Oil till light brown
4. Add Chili (
5. Swirl in the Pasta (Toss it in the air!)
6. Add Chicken Stock, Salt & Pepper ( Taste and adjust accordingly, Ask the expert in your house if in doubt)
7. Add the Water, Fry it till dry (This is to spread the Seasoning evenly if not you will have some surprise)
8. Enjoy !
