Let's me start by explaining what is Wagyu Beef.
1) It's a breed of cow called Wagyu

-White & Fine Fat layers between the meat

Grading
1. Beef Marbling Scale/ BMS (Grade 1-12)
- Marbling refers to the streaks of fat in meat
- The finer and more streaks of fat , the better the grade
- Grade 1 is the lowest, Grade 12 is the best.
2. Japanese Quality Grade (Grade 1-5)
- Judged by 4 Criteria
1. Marbling / BMS
2. Color & Brightness of Meat
3. Firmness & Texture of Meat
4. Color, Luster & Quality of Fat
- Grade 1 is the lowest, Grade 5 is the best.
Kobe Beef
A Special type of Wagyu Beef *Not Kobe Byrant
- These Condition below must be fulfilled to be classified as Kobe Beef
- Tajima cattle born in Hyogo Prefecture
- Fed by farm in Hyogo Prefecture
- Bullock or Virgin cow, meant to purify the beef
- Processed at slaughterhouse in Kobe , Nishinomiya , Sanda , Kakogawa and Himeji in Hyogo Prefecture.
- Marbling ratio called BMS is level 6 and above.
- Meat Quality Score is A or B
- Gross weight of beef is 470 kg or below.
Here's a tip when you go to any restaurant
Wagyu/Kobe Beef are always served Shabu-Shabu style, Raw, Grilled/Seared
But Never Braised/ Stewed !
