Dummies guide to be a Cake Transporter
-  The Do's and Don't s to prevent a cake aftermath.

Transportation



Upon collecting your cake, you will have to drive to your destination. Follow these tips if you don't want to murder your cake.


1) Flat Surface

- Always place your cake on a flat surface otherwise it will slide.
- Keep it parallel by placing a block or book on inner side of the seat (Where you put your butt)
- Place on the floor with some newspaper or keep it on your lap if you are not driving.

2) Drive Steadily

- Don't drive like you are racing.
- No sudden break (Keep a good distance from the car in front of you)
- Slow down on bumps and sharp turning.

3) Cold, Cold, Cold *Important 

- Keep your car cold by blasting your air con. (Otherwise cake/caramelized nut will melt. Ex. Baileys Choc Mousse with Caramelized Hazelnut)
- Especially in a hot afternoon, cake will not stay cold for long.

Before Consumption

1) Have a chill pill ,Bro.


- Always keep it chilled in the fridge at all times. The colder the better like beer.
- Home: Keep at least 2 hours in fridge or 1 hour in freezer before consuming.
- Restaurant: Tell them it's an Ice Cream Cake, it will be 1-2 hours when you are ready to sing birthday song.
- It's fine if its slightly frozen, it will buy you some time to sing song and melt the cake with candles.

2) Burn baby, Burn!


- Minimize the amount of candles.
- Do not plant the cake with lots of candle, as it will generate lots of heat which is bad for the cake.
- Always keep less than 10 candles.

Summary
Follow these simple steps to fully indulge in your cake.
1. Transport well.
2. Keep it cold.
3. Eat it cold.
4. Do not drink and drive.

If anyone would do a survey on which cuisine dominate in shopping complex in terms of sale. I'm pretty sure it will be Japanese Restaurant. Sushi Zanmai, Rakuzen,  Sushi King, Sakae Sushi, Sushi Tei, and if you live in the world of 9gag -welcome to Hentai Sushi & Grille



Sushi, Sashimi, Salmon, Tuna, Ebiko, Tobiko are always accompanied with Soy Sauce and Wasabi.
But do you know what Wasabi actually is?


Wasabi is also known as Japanese Horseradish, it's totally a different plant from Horseradish.
Here's a picture of how Horseradish look like:


Wasabi is green in color and Horseradish is white in color.
Both equally ugly.



HOWEVER, do you know that most of the Wasabi you are eating are not Wasabi at all?


I meant any Wasabi you find in japanese restaurant, sushi chains, supermarket, powdered form, paste form, or in a tube. Most of them are fake unless you are willing to punch a hole in your wallet.

Most Wasabi you ate are actually mixture of horseradish, mustard & green food coloring. Check out the ingredient list in of Wasabi sold in supermarket. You will not find the word "WASABI" ,you will find the word "HORSERADISH"instead. So why Wasabi make you cry?


Real Wasabi doesn't punch you hard in the nose and make you cry like a girl!It's suppose to enhance the delicacy of fresh seafood. The reason Fake Wasabi punch you hard in the nose is because of the mustard in it.


Here's a picture of Freshly Grated Wasabi and Fake Wasabi.
- Freshly grated wasabi are  always abit rougher like the left, while Fake Wasabi is always smooth like the right.
You can find real Wasabi in High End Japanese Restaurant, but of course it comes with a price of few dollars for just a small piece.


Real Wasabi is always grated fresh as it aroma will be lost it left more than 15minutes. That is why Wasabi is always hidden in between sushi to prevent exposing to air.


Why is most Wasabi fake?
1. Real Wasabi is very difficult to be grown.
2. Which makes it high in demand.
3. Which makes it very expensive.
4. Short Shelf Life = Less Profit

So the next time you are eating Sushi off from a Naked Guy, before you pick up your wasabi and risk crying like a girl. I hope you will think twice of trying Real Wasabi at least once in your life time.

Avocado Recipes @Sin Chew Daily News 13/7


1) Deep Fried Avocado & Prawn Bread Rolls
a)
Prawn – 10nos (Shell off, Small Cubes)
Egg – 1/2nos
Corn Flour – 1tbsp
Salt – 1 tsp
White Pepper – Pinch
Sesame Oil – A dash

b)
Avocado – 2nos (Small Cubes)
Canned Peach –4pcs (Small Cubes)

c)
White Bread – 8pcs
Egg –1no

  1. Mix all a) ingredient together, marinate for 10minutes.
  2. Mix in b) ingredient.
  3. Roll bread into thin slice, arrange prawn mixture nicely on top
  4. and roll up neatly. Seal with egg .
  5. Heat up oil for deep frying, deep fry till golden brown.
  6. Drain and allowed to cool on kitchen towel.
  7. Serve immediately.



2)Creamy Avocado Kaffier Lime Fish Slices
a)
Dory Fish – 1 nos (Sliced)
Salt – 1/2tsp
White Pepper – A Pinch
Corn Flour – 4tbsp
Water – 1tbsp

b)
Oil – 1 tsp
Minced Garlic – 2tbsp
Mayonnaise – 4tbsp
Evaporate Milk – 5tbsp
Kaffier Lime Leaf – 2 nos (Sliced)

c)
Avocado – 1 nos (Small Cubes)
Lemon Juice – 1 tsp
Sugar – ½ tsp
Salt – A Pinch

d)
Lettuce Leaves – to garnish
Sesame Seeds – to garnish

  1. Mix all a) ingredient together
  2. Heat up oil for deep frying, deep fry till golden brown.
  3. Fry minced garlic with oil until fragrant. Add in the rest of b) ingredient. Cook till creamy consistency.
  4. Turn of the heat and add in a) ingredient & c) ingredient. Season and adjust accordingly.
  5. Place Fish sitting on lettuce and garnish with sesame seed.

3) Ceasar Salad with Avocado Dressing
a)
Avocado – 1 nos
Mayonnaise – 2 tbsp
L&P Sauce – 1tsp
Dijon Mustard – 1tsp
Salt & Pepper – a pinch
Lemon Juice – 2tbsp
Garlic – 1 clove          
Olive Oil – 2tbsp

b)
White Bread – 3 nos (Cut into Cubes)
Unsalted Butter – 1 tbsp

c)
Romaine Lettuce – 1 pkt
Cherry Tomato – 10 nos
Parmesan Cheese – to Garnish


  1. In a blender, blend all ingredients a) except olive oil till smooth. Add in olive oil and blend again till smooth. Reserve aside.
  2. Melt butter and mix with white bread. Fry on frying pan until golden brown. Reserve aside.
  3. In a big bowl, toss ingredient a) and romaine lettuce together till well coated.
  4. Place in a new bowl and garnish with cherry tomato, fried bread and parmesan cheese.

4) Avocado Vanilla Mousse Cake
a)
Avocado – 2nos
Lemon Juice – 2 tbsp
Sugar – 160g
Heavy Cream – 100ml

b)
Gelatin – 1/4 tsp
Water – 2 tbsp
Heavy Cream – 250ml

c)
Digestive Biscuit – 140g (Crushed)
Sugar – 40g
Unsalted Butter – 60g

d)
Dark Chocolate – 30g
Heavy Cream– 30g

  1. Melt ingredient d) in microwave. Reserve aside.
  2. Line  a 7” Cake mold with Aluminium Foil.
  3. Melt butter and pour onto c) ingredient. Pour into the cake mold & press it down to keep it firm. Chill in fridge.
  4. In a blender, blend a) ingredient till smooth.
  5. Bloom gelatin & water together.
  6. Whip heavy cream till light and fluffy.
  7. Melt bloomed gelatin in microwave and mix into a) ingredient.
  8. Fold in whipped heavy cream and pour into cake mold. Chill for 2-3 hours before serving.
  9. Drizzle with d) ingredient before serving.

The Birthday Song, Before and After


Have you ever wonder why do we sing birthday songs?
What is the proper way to cut a birthday cake in order to bring more luck?
How to make a wish properly ?
Or most of all how to troll your friend with a birthday cake?

SOP: Light Candle -> Sing Song -> Wish -> Blow Candle-> Cut cake -> Eat

Some say the Greeks started by arranging the candle and lighting it up to make it glow like a moon. For the Germans, it's said to ward off evil spirits from children. Today the candle is commonly  placed on top to represent his/her age. However, some believe an extra candle would bring extra luck. So if you miscalculated your friend's age and place an extra candle on the cake, say this "This will bring you extra luck and no need to thank me for it. You are very much welcome!"

There's no need for further explanation for this song. FYI, Happy Birthday Song is the most popular song on Earth! Beating Justin Beaver & Psy anytime.


The Greeks used to believe the smoke from the candle would carry their prayers to Gods. So wish harder and your dream might come true! Or you could start making wishes when there is a massive forest burning nearby you.*Ahem I hope you know where I'm referring to ;)


It's believed that your wish will come true if you managed to blow all the candles out in one breathe. Any of your wish come true? If you ever wonder does blowing out candles is unhygienic, No but if only the Birthday boy/girl are healthy!


Here comes the last part, where you cut the lovely cake! If you feel very unlucky last year, smear your name with the knife and cut the cake. It's believed to bring you more luck!

Everyone loves whipping cream ! It's so versatile and sinful!

A lot people ask me all the time.
"Eddie, What's the difference between all the Cream like Half & Half, Whipping Cream, Light Cream, Heavy Cream and so on?"

It's the difference of the Fat Content .
1) Half & half (10.5 -18% Fat)
2) Light Cream (18-30% Fat)
3) Whipping Cream/ Heavy Cream (35+% Fat)
However worry not as Malaysia only has Whipping Cream/ Heavy Cream. It's the same thing just a different name.


You need a minimum of 35% Fat to whip Cream *otherwise it won't thicken.
